However, the process of smoke drying which lasts for 21 days at a minimum as opposed to less than a week’ s drying for normal smoked skipjack means that Katuobushi is much drier, therefore a better preserved product. Quality of the product is maintained by using specially imported wood from Japan at specific stages of smoking and by using Refrigerated Containers for shipping the finished product. Individual processes fine-tune the processing cycle to suit the extreme end of the niche market by supplementing the drying and smoking stages with custom processes, using humidifiers and differentiated packaging. Japanese Katuobushi processors prefer skipjack caught in the Maldivian waters because of lower fat content. Only the best of the harvest, preferably when landed with ice or in the morning is accepted by the quality conscious processors as raw material for their plants.
